The
Carhartt winemaking philosophy echoes that of their farming
practices – hands-on, handmade and an acute attention
to detail. All of the wines are crafted in a converted barn
on the ranch. This close proximity of the winery to the vineyard
ensures that the fruit is in its ultimate condition for processing.
Each cluster is gently de-stemmed and slightly crushed, and
then coaxed through fermentation in small bins. Upon completion
of primary fermentation, the wine is pressed non-mechanically
in a wooden basket press. The wine is then aged in a combination
of new and neutral French oak barrels for up to twenty months
before bottling. The wines are not filtered or fined.
Two red wines are produced from the estate
Carhartt Vineyard: a Merlot
and a Syrah; in addition, a
very small amount of "Chase the Blues Away" Rosé
is produced.
Although the Carhartt estate vineyard is
perfect for Merlot and Syrah, Mike and Brooke also like other
grape varietals and so work with select additional vineyards.
From Faith Vineyard a few miles to the north of the estate
vineyard in Santa Ynez Valley, comes Sauvignon
Blanc and Sangiovese.
The Rancho Santa Rosa vineyard in Sta. Rita Hills to the west
supplies Pinot Noir. from
Rancho Santa Rosa Vineyard to the west in the Sta. Rita Hills
appellation. The Lockshaw Vineyard in the Paso Robles Westside
region supplies Zinfandel.
