| With
a limited production, Carhartt winemaking is a low-tech,
hands-on approach. The grapes were hand picked at 23.5
brix, whole cluster pressed, cold settled for three
days, and finally racked into 50% stainless and 50%
neutral French barrels for fermentation. The juice was
allowed to go through primary fermentation only, at
which time it was racked off the lees. After six months
in barrels, the wine was cold stabilized, filtered and
bottled. There were 240 cases made.
The 2005 Sauvignon Blanc is a bright
and crisp wine with a beautiful nose of tropical fruit,
citrus, pear and mineral. On the mouth, it is characterized
by soft white fruit, lychee, pear and a crisp citrus
finish. This wine has personality with its fine texture
and lovely mouthfeel.
